Coffee: Some of the Percs!

If you enjoy a good cup o’ joe (or 2), we have great news! According to the Mayo Clinic, java may not just be for caffeine junkies anymore. Still a popular pick-me-up, it now seems that indulging in moderation can be good for your health. Here are some of the benefits that coffee may bring:

– protection against Parkinson’s disease, type 2 diabetes and liver disease, including liver cancer

– improvement in cognitive function

– decrease in the risk of depression

At Hockley Valley Resort, we serve amazing coffee supplied Sense Appeal Coffee Roasters, who roast their own beans in Toronto, and their coffee is all direct trade, so work directly one on one with the farmer. Here’s a recipe provided by Sense Appeal, if you want to take your coffee up a notch:

Sense Appeal’s Chai Latte

1 part Gur (Indian sugar) 2 parts water

Dissolve to create a simple syrup.

Add the simple syrup to a pressure cooker and add:

Green cardamom

Black cardamom

Fennel seeds

Whole black pepper

1 dried chili pepper

Cassia bark or cinnamon

Nutmeg

Ginger

Star anise

Kosher salt

Cook at 15 bars of pressure for 3 hours. Remove from heat and cool. Add some black tea and let steep overnight in a cool chai mixture. Remove from fridge the next day and strain the mixture. To make a chai latte, add one and a half ounces of chai and 8 ounces of steamed milk. Grate some cinnamon on top, and enjoy!
