Fulfilling a commitment to use the freshest ingredients is easy to accomplish when you only have to walk about 150 paces from your front doorstep to see what's ready to harvest...this is part of the experience that's taken root at Hockley Valley Resort.

Filled with a vast variety of herbs, vegetables and more than half a dozen fruit trees, the garden at Hockley Valley Resort became a reality in the fall of 2009 after consultation with local organic gardening expert, David Warburton from Caledon Farms.

Planted with care by John Paul Adamo himself, the first planting of over 1,000 organic garlic bulbs happened in October of 2009. Soon after a variety of seeds were planted with the hopes of having a bountiful first season.

Now under the care of full-time gardener, local Santo Bartucci, Hockley Valley Resort's dream has become a reality with an extensive selection of items that provide the necessary inspiration to the resort's team of chefs:

Beets - 4 varieties
Carrots - 5 varieties
Cucumbers - 3 varieties
Lettuce - 6 varieties
Tomatoes - 5 Heirloom and 5 standard varieties
Beans - 4 varieties
Onions - 4 varieties
Corn
Eggplant - 3 varieties
Herbs - 15 varieties
Berries - 5 varieties
Apple trees
Pear trees
Fig tree

With wonderful gardening weather this year, the restaurants at Hockley Valley Resort  - Babbo & Tavola | Chef's Table were filled with fresh herbs and vegetables provided inspiration for amazing summer menus.

We are looking forward to another bountiful harvest to create our new fall menus!
