Rhubarb Jam: A How-To

Have you been wondering what to do with your harvested rhubarb? Take it from us, rhubarb jam is one delicious option! How is it made? Here’s the recipe we use, right from our cabin kitchen:

1 lb. rhubarb
50 g brown sugar
100 mL sherry vinegar
1 cinnamon stick
2 cloves star anise
1 fresh bay leaf

Add the rhubarb to a pot (without water). Once it has broken down on its own, de-glaze it with sherry vinegar and then add the rest of the ingredients. Cook until desired consistency and store in a jar. Perfect on toast, on top of baked brie, as a dessert topping or even to make salad dressing!
