Thinking of brining your turkey this year? It’s a great way to add flavour and to make your turkey moist! We asked Chef Akshay, our Executive Chef, for advice and he shared with us the steps he used for his turkey. (Keep in mind, his turkey was roughly 8 lbs.)
10L water, salted
200g brown sugar
2-3 sprigs of rosemary
6-8 pink peppercorns
15g of mustard seed
3 bay leaves
5 cloves of crushed garlic
3 sprigs of parsley
Mix all ingredients together in the water and bring to a boil. Let cool.
Drop turkey in the water for 24 hours. Remove and rinse in cold water.
Stuff with seasoned/herb butter (rosemary, sage, paprika, garlic) beneath the skin.
Roast over a bed of onions, carrots and celery at 320° for 4 hours and enjoy!
