2 ½ cups flour
1 tsp. baking powder
1 tsp. salt
1 stick unsalted butter, softened
2 cups sugar
2 eggs
1 (15 oz.) container whole milk ricotta cheese
3 tbsp. lemon juice
1 lemon, zested

1 ½ cups powdered sugar
3 tbsp. lemon juice
1 lemon, zested

Preheat your oven to 375°.
In a medium bowl, combine the flour, baking powder and salt. Set aside.
In a large bowl, combine the butter and the sugar. Mix with an electric mixer until light and fluffy.
Add the eggs one at a time until incorporated.
Add the ricotta, lemon juice and lemon zest until combines.
Stir in the dry ingredients.
Line a baking sheet with parchment paper. Spoon the dough onto the baking sheet and bake for 15 minutes. Let cool about 20 minutes before frosting.

Combine the ingredients and stir until smooth.
Spoon the glaze on top of each cooled cookie, smoothing the glaze as you go.
Let the glaze harden for about 2 hours… and enjoy!
